Easy Pasta Salad with Olive Tapenade

This easy-breezy pasta salad is the perfect addition to a potluck, or a simple way to feed the clan on a weeknight. It’s fresh, healthy, and delicious!

Ingredients

8 oz. dried pasta of your choice — preferably small, such as fusilli or penne

2 5-oz. cans of tuna, drained

1 lb. of fresh tomatoes, diced

½ cup of fresh parsley, chopped — or any other fresh garden herbs you love!

½ cup of crumbled feta cheese

½ a red onion, diced

⅓ cup of Olive Tapenade

Squeeze of fresh lemon juice

Salt and pepper, to taste



To assemble: 

Cook pasta according to package directions.

Place all the ingredients in a large bowl and stir to combine. If you’d like, drizzle in a little olive oil for a thinner sauce consistency.

Serve either cold or at room temperature and enjoy!
