Tapenade-Stuffed Portobello Mushrooms

These tapenade-stuffed portobello mushrooms make a fantastic appetizer for your guests — and they only take a few moments to whip up!

 
 


Ingredients:

Portobello mushrooms (one per person)

Black Olive Tapenade or Kalamata Olive Tapenade

Cheddar cheese, grated

Fresh basil and/or thyme, finely chopped, for garnish (optional)


To assemble:

Preheat the oven to 350° and line a baking tray with parchment paper.=

Remove the stems from the mushroom (save them for stock, if you’d like!)

Fill the underside of the mushrooms with the tapenade of your choice.

Sprinkle the cheese on top, and bake for 20 minutes until the cheese is melted. Enjoy!
